Australia Day Public Holiday Ride

As Australia Day falls on a Saturday this year, we get the Public Holiday on Monday.

Is anyone up for a ride that day? Any suggestions? Something epic South? Or go North?

Options that I can see are...

Stanwell Tops (Waterfall, RNP to Stanwell Tops, Helensburg)
Big RNP (Waterfall, Helensburg, RNP to Audley)
Akuna Bay (either Spit Bridge or Wakehurst Pkwy to Church Point then Akuna Bay)
Brooklyn Bridge (with a return through Bobbin Head)

Or if someone wants to suggest something else I am open.
